In Defense of the much maligned Gluten… ClapSoCuisine™ #2

Of all the terrible fad diets that have come and gone, gluten-free is the worst!

Here’s a suggestion for real hope, change and responsibility:

The purpose of life is not to be happy. It is to be useful, to be honorable, to be compassionate, to have it make some difference that you have lived and lived well.

– Ralph Waldo Emerson

This Canadian White pan loaf with Cinnamon and Raisins added during shaping is a staple around here. I usually make a couple of loaves a week, sometimes even more. I like it best with a “shmear” of Cream Cheese toasted or not…

Loaf Brioche are a fave of mine. Brioche à tête, little muffin size Brioche with a little head on top are a more common form. To call Brioche a bread is stretching the definition of the word bread. It’s more a pastry or a cake then bread. Since there’s almost a pound of butter baked in these two loaves, just add jelly or preserves…

Fougasse is a traditional french herb bread often shaped like leaves as shown. I baked these particular loaves in celebration of Samhain, thus the Pentacle inscribed on the round. In the background is a pile of my Honey, Buttermilk Cornbread…

Back in the 70’s I got tired of the arguments over whether Sicilian or Neapolitan were best, so I make this Pizza a little of both…

In the late fall, my gardener friends often bring me their ugly produce. I often use some of those to make one or more of these, in praise of late season, final harvest veggies. The misshapen, the runts, the frost bitten. They arise in celebration of our earthly bounty thus…

I use these to make sandwiches of all kinds. They are particularly good with a nice half pound medium rare burger on em…

I can’t seem to make enough of these. I put a plate of em out . . . and they’re gone…

The next two pics show three of my fave Danish shapes and filling combinations. These are perfect when accompanied by piping hot tea or coffee!

I also make other shapes: Stars, crescents, envelopes, etc. and fill them with lovely things both sweet and savory…

And speaking of hot drinks and what goes with em. I give you what has to be the king of Coffeecakes. An Estonian delight often baked for birthdays and other celebrations. It has to be baked long and slow to get that traditional deep brown color. It’s flavored with Cardamom and Cinnamon. I baked this particular loaf to celebrate the end of the clinton and bush dynasties…
